<P><STRONG>【制法】:1.將茭白削去外皮,切去老跟,洗淨後縱切成兩半,用刀背稍拍一下,使其質地變鬆軟,切成窄片,放入開水鍋中燙一下撈出,拌上鹽和味精待用;</STRONG></P>

<P><STRONG>2.炒鍋上火燒熱,放入香油,下花椒炸出香味,撈出花椒粒不要,再放入乾辣椒炸成棕色,立即離火,加醬油即成調味油。</STRONG></P>
